Best served with beef bacon. (Do they have beef bacon where you are? The only time I have had it is at a local soul food restaurant whose owners come from South Carolina. It is fatty beef (belly? Not sure what part of the cow) sliced into rashers and cured. Kind of tasty though bacon does not have anything to worry about.
